Queen 16 Spotlight: Rediscovering Oatmeal!

There are 16 Super foods, that by now you know, I have nick named ” The Queen 16,” because I feel like royalty eating them! Today, we are rediscovering oatmeal, my newest comfort food. The American Heart Association lists oatmeal as a heart-healthy food because it lowers blood cholesterol. Additionally, it is rich in protein, vitamins and a fiber called “beta-glucans” which is known to slow the absorption of carbs and to stabilize blood sugar. Go for Steel Cut Oats which are more nutrient dense and prepare them overnight in a slow cooker.

Serve with a toppings bar of berries, nuts, Greek yogurt, cinnamon and pumpkin pie spices on the side. I make a full batch and store the leftovers in mason jars. Eh voila, breakfast for the next day or an on-the-go snack. Just pop in the microwave and enjoy the warmth and comfort of these royally yummy super-grains.

Slow Cooker Oatmeal  (Printable Recipe)

Place the following in a large slow cooker:

  • cups water
  • 2 cups  Organic Steel Cut Oats
  • 1/2 tsp sea salt
  • 1 tsp cinnamon or pumpkin pie spice (optional)
  • 1/4 c organic brown sugar (optional)

Stir all ingredients together. Cook on low for 8 hours or overnight. Serves 8-10. Enjoy!
